I need to know if you can retap a factory 12 lead 277/480V Wye generator to a 480V Delta configuration? The CAT OMM and A&I guides are not much help with this.

Not sound feasible to 480V. After the generator connected from Wye to delta, phase voltage will be same as line voltage at 277V.  What it could be with highest should be 277V, 3 phase.

The 12-lead 480Y/277V factory generator cannot be re-tapped to get 480V-delta.

What application requires 480V-delta? What's the problem with 480V-wye?

A transformer with a 480V delta secondary may be your option, if required.
